I remember as a young boy my mother Ida Xenos making baklava. My father Mike Patinsky would sit at the table cracking walnuts, removing the meat one piece at a time. He would place the nuts in a dish handing them to my mother. My mother would take the shelled walnuts and with her paring knife dice the nuts into small pieces. Ida made her syrup with sugar and water cooking the syrup slowly on a low flame stirring for consistency before pouring it over the phyllo and nut combination
Forty-five years later things have changed at Mikes Greek Gold. The syrup has been replaced with local honey, the nuts are shelled and ground, then spices are added. These days Mikes Greek Gold is baked in Dublin NH at the Dublin General Store. If you are traveling through Dublin please stop in, say hello and enjoy all the fine foods offered at the DGS!
